- Pigafetta recorded that Filipinos had roast fish cut into pieces, freshly gathered ginger, and [native] wine for supper. Europeans cooked with dried ginger, an expensive flavouring sourced in Asia. One wonders how Pigafetta related to the piquancy of fresh ginger. There was yet no chilli pepper recorded in the Philippines. The image is a detail of a Spanish Royal Decree of December 6, 1538. It permitted Juan de Oribe to grow ginger and other spices on Caribbean islands. GENGIBRE is on the 11th line from the top.
