Here begins a second series on Philippine food history. Antonio Morga, a native of Seville arrived in Manila in 1595, the year when the Spanish colony called Filipinas turned 30 years old. He became senior auditor of the Manila Audiencia and witnessed first-hand historical events and everyday customs such as how natives and Spanish settlers ate. “Events in the Philippines” that he penned in 1609 is the basis for this food history series.
