Title:
Mexican Spinach
Description:
As the 16th century ended, native Filipinos were eating vegetables that included boiled QUILITIS (in photo), according to Antonio Morga. It is the “thorny amaranth” (Amaranthus spinous) with edible leaves and is native to tropical America. In Mexico it is called quelite quintonil. During the early Conquista there, it was a criminal act to grow the plant’s cousin, AMARANTO (Amaranthus cruenta) now considered a high protein power food. Hands of the insistent were chopped off by the Spanish as punishment! The plant was outlawed because of its use in pagan rites including those honouring Huitzilopochtli, principal war god.
