Title:
COUNTRYSIDE CUISINE
Date Created:
2021-09-28
Description:
When the religious declared by 1740s that they were servicing a million native souls, it seemed the Conquista could be deemed over. If there were peace in rural areas, Spanish could feel safe to settle and develop profit centres beyond Intramuros Manila. Around 20 years later there was still a shockingly minimal number of Spanish in the countryside. The Augustinian missions counted only 266 Spanish men and women in all the provinces they served! Their only villages with more than 10 Spanish residents were Tondo (35 persons) and Tambobong (12), Bulacan (12), Pampanga (Usua, 18; Bacolod, 40; Candava, 18), Ylocos (Batac, 35), Yloylo (Xaro, 14), Panay (Capiz, 16). The pattern would have been similar for the other orders.
