- Our current focus is Philippine Food from 1665-1774, the second Spanish colonial century. The image shown would approximate how the seat of Spanish government, commerce, and residence looked in 1665. It influenced significant but gradual transitions in cuisine. Notice at bottom right the one bridge connecting the walled city to Binondo across Pasig River. As our century starts to end, around 1760, the Real Alcaiceria de San Fernando would be built in the Binondo-San Nicolas area. The new tax house with a silk market could house traders till winds were favourable for their return home. At left is the connection of Intramuros to the south where there were poor Spanish soldiers with India partners, as well as native communities before reaching Ermita church. Our century will end with military breaches of the protective moats and a wake up call to colonial residents.
